In the heart of the Gorges de l'Allier, this family-run hotel-restaurant looks out over the bridge and the river. Closely connected to their terroir, the Brun family – Philippe and Michelle, the parents, supported by their son and his partner – elevate this rugged landscape in cuisine that celebrates the many ingredients to be found in this corner of the world: mushrooms, Auvergne meats and cheeses, salmon from a local fish farm, as well as wild plants and flowers. Enjoy a ceviche of trout with Espelette chilli, avocado and tarama condiments, bulgur and lamb sweetbreads with anchovy butter, or an original combination of raspberry sorbet and raspberry trompe l'œil, malted barley and a pure malt cream from the Distillerie des Bughes.
